Gorgonzola DOP Cheese
Gorgonzola takes its name from the Lombard town of the same name
that gave it its birth, where the Gorgonzola Festival is celebrated every
year towards the end of September.
Raw material: Pasteurized cow's milk
Appearance: The rind is rough, rose-gray in color, the paste is
compact and firm, white or straw-colored with green-blue streaks
Taste: Round, with marked notes of mold and toasted fruit.
Seasoning: at least 120 days.
Usage tips:
perfect at the end of a meal, delicious in contrast with meat beats,
replacing salt, or with sauteed or raw vegetables.
