La Muletta consists of 80% high-quality pork meat of the highest quality such as thigh, pork loin culatello, shoulder and shoulder of medium-grain minced shoulder and 20% made with bacon fat; these two portions are ground together and subsequently seasoned with salt, pepper, and spices according to tradition. To stuff the dough, natural casing is used, which is more suitable for long aging and gives the salami an irregular shape.
